Green Curry Paste

Ingredients:

– 1 tbs coriander seeds
– 1 tsp cumin seeds
– 5-10 green chilies
– 3 tbs sliced shallots
– 3 cloves garlic, sliced
– 1 tsp sliced galangal
– 1 tbs sliced lemongrass
– 1/2 tsp kaffir lime zest
– 1 tsp chopped coriander root
– 5 black peppercorns
– 1 tsp salt
– 1 tsp dried shrimp paste

Directions:

– Dry-fry coriander and cumin seeds in a wok over low heat for 5 minutes, then grind into a powder.
– Add remaining ingredients, except shrimp paste, and grind well.
– Add shrimp paste and grind to make 1/2 cup fine-textured curry paste.
